Preparation time- 15min

Total time- 2hr

Ingredients
Wholewheat Flour(WWF)- 100gm
All Purpose Flour(APF)- 140gm
Water- 100gm
Milk- 80gm
Yeast- 1+1/4 tsp
Olive Oil- 2 tbsp
Milk Powder(optional)- 1 tbsp
Salt- 3/4 tsp

Method:
1. Take lukewarm water, add 1 tsp sugar and yeast. Give it a quick mix and let it sit for 5-10 minutes.

2. Meanwhile, take a bowl and add WWF, APF, milk powder, sugar and salt. Mix well.
3. To this mixture, add bloomed yeast, milk in parts and 1 tbsp oil. Combine them together and you will get a sticky dough.

4. Lightly sprinkle flour on a clean surface and place the dough on it. Knead it while gently applying pressure on it. Do not be tempted to add flour to get over the stickiness. After 10 minutes of kneading you will get a smooth dough.
5. Place and cover the dough with seam side downwards in a well greased bowl for first rise or until the dough doubles in size. (*Rise depends on the weather conditions in your area)
6. After first rise, punch the dough and knead it gently and give it a round shape with seam side downwards.
7. Generously grease your pan with butter.
8. Divide the dough into equal parts and tightly roll them into small balls.
9. Place the balls in the pan with a little distance between each ball.






10. Cover them and keep them for second rise or until they double in size.
11. Once they are double in size, give them milkwash.
12. Place the pan in a preheated oven @ 180 for 20 minutes.
13. After 20 minutes take the pan out of oven and demould it.
14. Apply butter on it and let them cool.
15. Your pav buns are ready.
