Sooji / Rawa Cake



Ingredients:

Melted butter             1/2 cup
Powdered sugar         3/4 cup
Sooji (Rawa)             1 and 1/2 cup
Maida                        1/2 cup
Curd                          1/4 cup
Milk                          3/4 cup + 1/4 cup
Baking powder         3/4 tsp
Baking soda              1/2 tsp
Elaichi powder         1/2 tsp
Dryfruits                   handful
Tutti frutti                 optional



Method:


  1. Mix together butter and sugar till you get a smooth silky texture.
  2. Add sooji and maida with curd and milk to above mix and combine together everything well.
  3. Add milk and let the mix soak for about 30-35 mins.
  4. Add baking soda, baking powder, elaichi powder and dryfruits to the mix and pour in a greased tin.
  5. Bake at 180 degree C for 40-45 mins till an inserted toothpick comes out clean.

Cool on a wire rack and enjoy dry cake with tea, coffee, milk or just like that !!!


Optional: You could also substitute elaichi flavour with kesar essence.
